Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large egg yolks
- 2 teaspoons pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup sanding sugar
Instructions
- Cream the softened butter, granulated sugar, and salt in a stand mixer for 2-3 minutes until light and fluffy.
- Add the egg yolks and vanilla extract, mixing until well combined and scraping down the sides of the bowl.
- Gradually add the flour on low speed, mixing just until incorporated, then gently knead the dough into a ball on a floured surface.
- Shape the dough into a 12-inch log, wrap tightly in parchment, and chill in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll the chilled log in sanding sugar to coat the outside, then slice into 3/4-inch rounds.
- Place cookies 1 inch apart on baking sheets and bake for 10-12 minutes until edges are lightly golden, then cool completely.
Notes
For the cleanest slices, ensure the dough is thoroughly chilled before cutting. If the dough becomes too soft while rolling in sugar, return it to the fridge for 15 minutes to firm up again for better results.
